
My Gluten-Free Monday: A Whirlwind of Questions and Discoveries!
My world just got flipped upside down... or rather, right-side up? On Monday, I found out I have a gluten sensitivity. After years of mysterious stomach aches, fatigue, and "brain fog," I finally have an answer. And let me tell you, it's a mix of relief and "OMG, what do I eat now?"
So, in the spirit of sharing (and because I know I'm not alone!), I'm documenting my gluten-free journey here. And, because I know you're probably asking the same questions I am, let's dive into some of the most common ones:
What is Gluten Sensitivity, Anyway?
This was my first question, too! It turns out, it's NOT the same as celiac disease or a wheat allergy. What is the difference between celiac disease, gluten sensitivity, and a wheat allergy? That's a huge question for many.
- Celiac Disease: An autoimmune disease where gluten damages the small intestine.
- Wheat Allergy: An allergic reaction to wheat proteins, not just gluten.
- Gluten Sensitivity (NCGS): A condition where you experience symptoms after eating gluten, but without the intestinal damage of celiac or the allergic response of a wheat allergy.
Basically, my body just doesn't like gluten. Period.
Okay, So... What Can I Actually Eat?
This is the big one, right? What foods contain gluten? It's not just bread and pasta, guys. Here's what I've learned:
- Obvious Culprits: Wheat, rye, barley, and anything made with them (bread, pasta, pastries, etc.).
- Sneaky Sources: Soy sauce, certain sauces and gravies, processed foods, some candies, and even some medications!
Learning to read labels is now my part-time job. And, of course, I'm already on the hunt for gluten free alternatives.
How Do I Avoid Cross-Contamination?
This is huge! How can I avoid cross-contamination? Even a crumb of gluten can trigger symptoms. Here's my plan:
- Dedicated toaster and cutting board.
- Separate storage for gluten-free foods.
- Washing utensils and surfaces thoroughly.
- When eating out, asking lots of questions!
How Do I Know If I Have Gluten Sensitivity?
I had a lot of symptoms, but it took a while to get answers. What are the symptoms of gluten sensitivity? Mine included:
- Digestive issues (bloating, pain)
- Fatigue
- "Brain fog"
How is gluten sensitivity diagnosed? There's no single test. It's often a process of elimination. My doctor ruled out celiac and allergies, and then we tried a gluten-free diet.
Are Gluten-Free Products Healthy?
Just because it's gluten-free doesn't mean it's healthy. Are gluten-free products healthy? Many are highly processed, so I'm focusing on whole, naturally gluten-free foods like:
- Fruits and vegetables
- Lean proteins
- Rice, quinoa, and other gluten-free grains
Can Gluten Sensitivity Go Away?
This is a tough one. Can gluten sensitivity go away? The answer is that it is still being researched, and it varies person to person. Some people find that after a long period of avoiding gluten, that they can tolerate small amounts. Others find it to be a lifelong issue.
